A beef side refers to one of the two approximately equal halves of a dressed beef carcass. A side of beef consists of a front quarter and hindquarter.
The front quarter of a beef side is separated from the hindquarter at the 12th and 13th ribs. The front quarter consists of the rib, chuck, shank, brisket, and plate. The rib features cuts like prime rib and short ribs, while the chuck includes sections such as the blade, flat iron, neck, cross rib, and chuck short ribs and of course, ground beef.
The hindquarter consists of the loin, flank and hip—featuring many premium, tender, and high-value cuts of beef, making it more expensive than the front quarter. Separated from the front quarter between the 12th and 13th ribs, the hindquarter includes the flank, the loin, which contains cuts like the T-bone, tenderloin, and strip loin and sirloin.. The hip features the rump, round (with inside and outside round, eye of round), the sirloin tip and the hind shank, offering a variety of robust cuts including ground beef.
A side of beef weighs around 440-480 lbs. This is the called the dressed weight, which is the weight of the beef when it is first hung to start aging. You will yield approximately 60% of this as actual lbs of beef in your freezer, the balance will be bones, fat trim and moisture loss from the aging process. The price is based on the dressed weight and is $7.49 per lbs. The $500 is a deposit which is required prior to cutting and packing your order and will be deducted from your final invoice balance.
After you place your order you will receive an email with a link to a form which will guide you through making the selections for our butchers to cut your meat. You will choose steak thickness, roast size, package size, etc. Don't worry, we are here to help if you have any questions. We will cut it to your preferences, vac pack it, label each piece, freeze it, box it and deliver it to you home (delivery is included when you order a side or a quarter of beef).
Please note delivery is usually within 3 weeks of placing your order. We will reach out to you with the exact weight of your quarter (balance of the invoice is due prior to delivery) as well as to set up a delivery day.
