Enright Cattle Company is a third generation farm that produces exceptional quality local beef. All cuts of beef are dry aged for approximately 21 days before they are cut and packaged.
The outside skirt is the diaphragm muscle, it is extremely flavorful and very tender! It is suitable for marinating (or even just seasoning with salt) and cooking over high heat.
