We are best known for our large traditional and unique pizzas but we also have a good variety of appetizers, sandwiches, salads and main course meals -- all inspired by Italian, French and Canadian culinary traditions.
Using local products helps us develop strong relationships with our suppliers. As a chef, I have far greater input and control over quality -- and can contribute positively to our own Kingston economy.
When it comes to the Enright Cattle Company, I love the real rib-eye centre. Professionally I cannot ever get enough short ribs, either. With unusual cuts, I like the cheeks for main courses and have found excellent uses for the tongue as appetizers. My favourite beef dish? For the moment it’s dry rubbed short-ribs braised in peperonata.
